POMMARD
Under the stewardship of the impressive Paul Zinetti, the domaine, which is biodynamic and follows the lunar calendar, totals 9 hectares – 5 hectares of which are the magnificent 1er Cru monopole Clos des Epeneaux, responsible for the deepest, richest, most intensely concentrated and longest-lived wines in Pommard. A 5.25-hectare monopole, situated in the heart of premiers crus Grand and Petit Epeneaux. 22 months in 40% new oak. 31 hl/ha in 2018.
The Bourgogne Aligoté is a blend of 60% 10 year old vines and 40% 90 year old vines (Aligoté Doré), situated in Pommard and Meursault. 60% vinification and maturation in 600 litre demi-muids and 40% in stainless steel for 12-14 months.
Their Volnay and Auxey-Duresses are all purity, finesse and
elegance. The grapes are 100% destemmed and whole berries
are retained, without crushing. Pre-fermentation maceration is
5-8 days at 13oC. Alcoholic fermentation lasts between 5-10 days
and there is a post-fermentation maceration of around 14 days.
The wines then spend between 18-24 months in barrel – ranging
from no new oak for the village wines and 30% for the Clos. The
wines are usually bottled unfined and unfiltered.
