Chablis
Domaine Jean Collet et Fils own some 40 hectares which they farm mainly organically, and the rest is in organic conversion. The Collet family are great friends of Christian and Fabien Moreau. Romain Collet represents the new generation in charge of the Domaine.
We met Romain two years ago at the Organic Wine Fair in Montpellier and seeing such a tiny vintage in 2021, we decided we must take on another Domaine.
Chablis 1er Cru Vaillons, 9 ha of 45 year old vines (on average). 5 different climats, all vinified separately. Vinified in equal parts of Foudres, stainless steel cuve and barrel. Chablis 1er Cru Forets, vines planted in 2008. Vinified in 90% concrete “eggs” and 10% barrel. Chablis 1er Cru Montée de Tonnerre, 2 hectares of 40 year old vines. 100% vinified in barrel. Chablis 1er Cru Sécher, a lieu dit of Les Vaillons. Vinified in 70% stainless steel tanks and 30% new barrels. Chablis Grand Cru Valmur, planted in 1972 on the west-facing, cooler, side of Valmur. Vinified in 100% barrels, with no new oak.
