Domaine Lucie Thiéblemont
Chablis
Lucie Thiéblemont and Charly Nicolle met in 2010 when Lucie was working as a chef in the three-star restaurant “La Côte Saint-Jacques” near Chablis. Charly comes from a family that has been involved in winemaking for over 50 years; he has been running his own winery since 2001. Lucie has always been passionate about Chablis and so she and Charly decided to work together early on. In 2020 an opportunity arose to acquire some Chablis Village and Premier Cru plots, a new Domaine that would bear Lucie’s name. Organic methods are used in the vineyards, with no chemical weeding, interventions are made only when necessary. Stainless steel is used for the ageing with long lees contact. The resulting wines are have extra intensity, and purity, a true Chablis style.
Chablis Village comes from vines situated in Fleys (right bank of the Serein river), more precisely “Sur le Moulin” (2,25 hectares). Ageing on fine lees for 14 months in stainless steel tanks (2/3) + stainless steel barrels (1/3) of 330 litres. Bottling takes place the following November.
Chablis 1er Cru Les Fourneaux comes from vines situated in Fleys (right bank of the Serein river), more precisely lieu-dit “Cote des Pres Girots” (about 0.85 hectare). Ageing on fine lees for 18 months in tanks (3/4) + oak barrels (1/4) of 400 litres. Bottling takes placed in April, 18 months after harvest.
