DOMAINE ANDRÉ DEZAT ET FILS
“The famous André Dezat made the Domaine famous over 40 years ago. The Domaine is now in the safe hands of his sons Louis and Simon Dezat and their respective sons Arnaud and Firmin. Their wives, Sylvie and Nadine, run a very efficient office. Firmin studied in Tours and spent several months at our Californian winery Cuvaison.
The Dezats’ 20 hectares of Sancerre are superbly situated around five villages. Again, low yields, and enormous care in the vineyards and cellars make for only the finest Sancerre. Their 15 hectares of Sancerre Blanc comes from a mixture of 10% flint, 25% calcareous clay and 65% pebbly limestone. A pneumatic press is used and a long alcoholic fermentation is carried out in stainless steel at between 16 °C to 18 °C and aged on its fine lees for 2 months. The Sancerre Blanc Cuvée Prestige comes from an old vine plot on “Terre Blanche”, limestone and clay. The grapes are hand harvested and fermented and aged in in 1/3 new oak barrels, 1/3 1 year old barrels and 1/3 2 year old oak barrels. The wines undergo bâtonnage every 2 weeks. They spend 10 months on their fine lees and are bottled the August after harvest. The Sancerre Rosé comes from their Pinot Noir holdings on flint and pebbly clay and limestone land. The grapes undergo a cold maceration before being pressed.
Depending on the year, the Dezats may use the saignée method for a maximum of 20% of the total volume. The Sancerre Rouge comes from their Pinot Noir holdings on pebbly clay and limestone (75%) and 25% clay-limestone land. The grapes undergo a cold maceration for 4 days, alcoholic fermentation is carried out in vat for about 12 days at 25°C, the wine is then transferred to barrel where malolactic fermentation occurs. The wines are aged for 9 months in barrel with 15% of new oak. The Sancerre Rouge Cuvée Prestige comes from 100% pebbly clay/limestone from selective parcels of old vine Pinot Noir totalling 1.5 hectares. The grapes undergo a cold maceration for 5 days, the alcoholic fermentation occurs in vat at 25°C for 12 days. However for the Prestige Cuvée the Dezats use a little punching down and pumping over. The wine is then moved into barrel where malolactic occurs in a mixture of new oak barrels and 1 year old barrels and are aged for 9 months.
They also have Domaine Thibault in Pouilly Fume. The finest of Pouilly Fumés. Some years ago, André Dezat bought 4.5 hectares of particularly well-sited vineyard near Tracy, which has been expanded a little each year to a total of 15 hectares, with parcels in other communes including St. Andelain and Nozet. Of their 15 hectares, 65% are from the clay/limestone pebbles, 25% limestone and clay and 10% flint.”
