Astrid Hubert has 15 hectares in the heart of the Pays d’Auge.
She uses 15 varieties of apples, together with 5% of pears, and
never sprays her crop. The cider is left in foudres for 1 year before
distillation, the Calvados then being matured in long old oak barrels.
She only makes single vintage Calvados which is of sublime quality. The 2019 although young is wonderfully smooth! The 2004 Vintage is fuller in body than the 2019 with a wonderful,
bruised apple character. Highly recommended!
