Pino (Giuseppe) and Mauro Pavia have 10 hectares on clay soil at between 200 and 280 metres above sea level. The vines are between fifteen and fifty years old.
Grignolino d’Asti DOC is a light-coloured red, with bright red fruit and delightful acidity. Best served slightly chilled!
Their superb entry level Barbera d’Asti DOCG Casareggio is aged partly in stainless steel and partly in botte, and bottled in May following the harvest. Barbera d’Asti DOCG Blina spends a year in steel before bottling.
Barbera d’Asti Superiore DOCG Moliss is aged in a mixture of Austrian oak botte and French demi-muids.
Barbera d’Asti Superiore DOCG La Marescialla is put into Allier barriques in the January/February following the harvest, where is ages for 11 or 12 months. All the barriques are assembled in a stainless-steel tank, in which the wine spends 3 months until it is bottled in May. The bottled wine receives 6 months’ aging before being released to market.
