FATTORIA LA RIVOLTA
Taburno
The Cotroneo family began acquiring vineyards in Campania at the start of the twentieth century, in the districts of Ciurica, Rivolta and Roseto. In 1997 Paolo and Gabriella and their cousin Giancarlo became the third Cotroneo generation to work the land, and they immediately set out to make the estate organic. The following year they began to replant 80% of the vines. Their first organic certified vintage was 2001. The estate’s 31 hectares are planted on hillsides, mainly limestone and clay, at between 250 and 550 m.a.s.l., all south/south-east facing, in the shadow of Mount Taburno. The harvest begins in September for Vigneti di Bruma Falanghina and Aglianico Beneventano IGP; at the end of September for Falanghina del Taburno DOP, and the end of September/early October for Coda di Volpe del Taburno DOP , Fiano del Taburno DOP and Greco del Taburno DOP.
The white wines, both IGP and DOP, plus Vigneti di Bruma Aglianico Beneventano IGP, are fermented – and aged – in stainless steel. Fermentation last about fifteen days, after a short cold maceration. Piedirosso del Taburno DOP, also known in Neapolitan as “Per’ ‘e Palummo.” (Pigeon foot), is harvested in October and vinified in stainless steel. Aglianico del Taburno DOCG is harvested in late October, fermented in stainless steel and aged for 18 months in 25hl French oak barrels. The assembled wine then spends a further twelve months in bottle before being released to the market. Coda di Volpe, by the way, means Tail of the Fox!
